Pie Filling:

In a large mixing bowl, combine:

4 cups blueberries
1/2 cup sugar
2 tbsp molasses
2 tbsp minute tapioca
1 tsp lemon extract, or zest from 1 lemon
1 tsp cinnamon

Put inside a 9-inch pie plate lined with your favorite pie pastry crust. Cover the filling with a second pie pastry. Slit the top of the pie three times, and bake in the oven at 375 for 50 minutes.
